Ingredients

12 ounces Thomas Farms flank steak
Kosher salt
Black pepper
1 tablespoon extra virgin olive oil
Jar of bacon jam
Baguette cut into ¼-inch slices (16-20 slices depending on how many people you are serving)

 

Caramelized Onions
1 large white onion, thinly sliced
2 tablespoons unsalted butter
½ teaspoon salt

 

Whipped Goat Cheese
4 ounces of plain goat cheese
2-3 tablespoons extra virgin olive oil
Pinch of salt
½ teaspoon black pepper





Instructions

  1. Heat the butter in a skillet over medium heat. Add the onions and sauté them for 5 minutes or until they start to soften.
  2. Add in the salt, reduce the heat to medium-low and cook for 45 minutes, or until the onions are soft and golden.
  3. Add all of the whipped goat cheese ingredients to a food processor and blend until smooth. Set aside.
  4. Season the steak with salt and pepper to taste. Heat oil in a cast-iron skillet over medium-high heat. Once hot, add the steak and cook for 5 minutes on each side. Let the steak sit for 5 minutes before slicing thinly.
  5. Place the slices of bread on a sheet pan and rub both sides with some oil.
  6. Heat under the broiler for 1-2 minutes until slightly golden.
  7. On each slice of bread, spread the goat cheese, then top with a teaspoon of bacon jam, some caramelized onions and 1-2 slices of steak. Top with some flakey salt and parsley before serving.
