12 ounces Thomas Farms flank steak

Baguette cut into ¼-inch slices (16-20 slices depending on how many people you are serving)

Caramelized Onions
1 large white onion, thinly sliced
2 tablespoons unsalted butter
½ teaspoon salt
Whipped Goat Cheese
4 ounces of plain goat cheese
2-3 tablespoons extra virgin olive oil
Pinch of salt
½ teaspoon black pepper
2-3 tablespoons extra virgin olive oil

Instructions
- Heat the butter in a skillet over medium heat. Add the onions and sauté them for 5 minutes or until they start to soften.
- Add in the salt, reduce the heat to medium-low and cook for 45 minutes, or until the onions are soft and golden.
- Add all of the whipped goat cheese ingredients to a food processor and blend until smooth. Set aside.
- Season the steak with salt and pepper to taste. Heat oil in a cast-iron skillet over medium-high heat. Once hot, add the steak and cook for 5 minutes on each side. Let the steak sit for 5 minutes before slicing thinly.
- Place the slices of bread on a sheet pan and rub both sides with some oil.
- Heat under the broiler for 1-2 minutes until slightly golden.
- On each slice of bread, spread the goat cheese, then top with a teaspoon of bacon jam, some caramelized onions and 1-2 slices of steak. Top with some flakey salt and parsley before serving.
