  • 2 tablespoons olive oil
  • 1 package Thomas Farms Bone-In Goat Cubes
  • 1 teaspoon kosher salt
  • 1 yellow onion, diced
  • 3 yellow potatoes, peeled and cubed
  • 2 garlic cloves, minced
  • 1 teaspoon minced ginger
  • 2 tablespoons Jamaican curry powder
  • 2 sprigs of fresh thyme
  • 1/2-1 teaspoon cayenne pepper
  • 2 scallions, chopped (whites and greens)
  • 1 teaspoon allspice
  • 1 teaspoon adobo seasoning
  • 2 cups beef or chicken broth
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the goat cubes with kosher salt. Once the oil is hot, add the goat and brown on all sides, for about 10 minutes. You may need to do this in batches depending on the size of your pan.
  2. Once browned, turn off the heat and add the goat to the slow cooker.
  3. Top the goat with the remaining ingredients, stir everything together and cook on low heat for 6-8 hours until the goat is tender and falls apart.
  4. Serve as is or over rice and topped with more diced scallions.
