Thomas Farms Ground Lamb

Thomas Farms Ground Lamb

  • 1 pound Thomas Farms Grass Fed Ground Lamb
  • ⅓ cup crumbled feta cheese
  • 2 cloves garlic, finely minced
  • ¼ cup finely chopped fresh mint leaves
  • ½ teaspoon smoked paprika or regular paprika
  • ½ cup hummus
  • 4 brioche buns, split and toasted

Instructions

  1. Heat an air-fryer (360° or 400°F. depending on the settings on your fryer). While the fryer is heating, season the lamb with salt and pepper.  Mix the lamb, cheese, garlic, mint and paprika in a large bowl (for the best texture, mix just until the ingredients are combined).  Shape the lamb mixture into 4 burgers. 
  2. Place the burgers into the basket of the air-fryer and cook for 5 minutes. Turn the burgers over and cook for 5 minutes more or until the internal temperature reaches 160°
  3. Spread the hummus on the cut sides of the buns. Divide the burgers among the buns and top with your favorite burger toppings (like lettuce, red onion and/or chopped red pepper).

To broil, position the rack 6 inches from the heat and heat the broiler to medium-high.  Broil the burgers on the rack in a broiler pan for about 5 minutes per side or until the internal temperature reaches 160°F.

For Greek Tacos, fold the lamb mixture and toppings into warm pocketless pita breads.
