Thomas Farms Ground Lamb

  • 3 bell peppers, cut in half lengthwise and dicing the tops
  • Olive oil spray
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 pound Thomas Farms Ground Lamb
  • 1 (15 ounce) can diced tomatoes (no salt added)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 cup orzo, cooked
  • 1 teaspoon salt 
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 lemon, juiced
  • 1/4-1/3 cup feta cheese

Instructions

  1. Preheat the oven to 400 degrees F. Once preheated, add the cut peppers to a baking dish, spray lightly with olive oil spray and cook for 10 minutes.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the diced onion and pepper tops to the pan and cook for 3-4 minutes, until softened.
  3. Add in the minced garlic and cook for 1 minute. Next, add the ground lamb and cook until browned, about 5 minutes.
  4. Mix in the diced tomatoes and spices. Stir and simmer for about 5 minutes.
  5. Turn off the heat and stir in the cooked orzo and herbs. Spoon the mixture into the peppers and top them with feta cheese.
  6. Place the peppers in the oven and cook for 20 minutes.
  7. Serve and enjoy!
