Grilled Lamb Loin Chops with Peanut Noodles
- 1/5 pounds lamb loin chops
- Salt and black pepper to taste
- 2 cups broccoli cut into small pieces
- 1 cup shredded carrots
- 1/4 cup chopped scallions
- 1 package of rice noodles
Instructions
- Cook noodles according to the package. Drain and rinse under cold water.
- Blanch or steam the broccoli for 5 minutes. Set aside.
- Season the lamb with salt and black pepper. Preheat grill to 425 degrees F. Once hot, cook lamb for 8-10 minutes. Remove from the grill and allow them to rest for about 10 minutes.
- Make peanut sauce by combining all the ingredients in a jar or bowl.
- Add the noodles to a bowl with the vegetables and pour the peanut sauce on top. Toss to combine.
- Top the noodles with the lamb, garnish with more scallions and chopped peanuts and serve.
