Ingredients

Grilled Lamb Loin Chops with Peanut Noodles

  • 1/5 pounds lamb loin chops
  • Salt and black pepper to taste
  • 2 cups broccoli cut into small pieces
  • 1 cup shredded carrots
  • 1/4 cup chopped scallions
  • 1 package of rice noodles
Peanut Sauce
  • 2 tablespoons unsweetened peanut butter
  • 1 tablespoon honey
  • 1 garlic clove minced
  • 1 tablespoon sesame oil
  • ¼ cup coconut aminos or soy sauce
  • ½ lime juiced
  • 1/4 cup water
  • ½ teaspoon red pepper flakes
  • Instructions

    1. Cook noodles according to the package. Drain and rinse under cold water.
    2. Blanch or steam the broccoli for 5 minutes. Set aside.
    3. Season the lamb with salt and black pepper. Preheat grill to 425 degrees F. Once hot, cook lamb for 8-10 minutes. Remove from the grill and allow them to rest for about 10 minutes.
    4. Make peanut sauce by combining all the ingredients in a jar or bowl.
    5. Add the noodles to a bowl with the vegetables and pour the peanut sauce on top. Toss to combine.
    6. Top the noodles with the lamb, garnish with more scallions and chopped peanuts and serve.
