Ingredients
Thomas Farms Ground Pork
Pickled Carrots
- 1 cup shredded carrots
- 1 cup water
- ¼ cup sugar
- 1 tablespoon kosher salt
- ⅓ cup rice wine vinegar
Meatballs
- 1 pound Thomas Farms Ground Pork
- 2 garlic cloves, minced
- 2 tablespoons scallions, finely diced
- 1 tablespoon cilantro, chopped
- 1 tablespoon oyster sauce
- 1 tablespoon sriracha
- 1 tablespoon honey
- 1 teaspoon salt
- ½ teaspoon black pepper
Sriracha Mayo
- ½ cup mayonnaise
- 2 tablespoons sriracha
- 2 teaspoons rice vinegar
Sandwiches
- 1 large baguette sliced into quarters
- 1 cup thinly sliced English cucumber
- Cilantro, scallions and jalapeños for garnish
Instructions
Pickled Carrots
- Combine all of the ingredients in a jar, cover and shake to combine.
- Store in the fridge for at least 30 minutes while you prepare the remaining ingredients.
Meatballs
- Combine all of the ingredients in a large bowl and form into 12 balls.
- Heat oil in a skillet over medium-high heat, add the meatballs and brown on all sides until cooked through, about 10 minutes.
Sriracha Mayo
- Make the sauce by mixing all ingredients together in a bowl or jar.
Sandwiches
- Slice open the bread and spread mayo on both sides.
- Fill the sandwiches with three meatballs, pickled carrots and sliced cucumber. Garnish with cilantro, scallions and jalapenos.
